Tucked into a Yeonhui-dong alley: a single 2.5kg hybrid roaster. We roast only what the day needs — nothing more. So the cup you enjoy today was most likely roasted within the last three days.

Reading the fire
and the time.



Every green bean carries its own density and moisture. You simply can't roast the thin beans of Yirgacheffe and the dense beans of Antigua on the same curve. Every Tuesday and Thursday at dawn, we check the day's humidity and room temperature, then recalculate the time to first crack.


We never push too hard. We stop at the moment sweetness opens up, and move the beans to the cooling tray before the aromas can fade. In the end, roasting isn't about adding — it's about knowing when to stop.

Light Roast


Stopped just after first crack to preserve as much of the origin's floral and fruity aromas as possible. Bright acidity and a black-tea clarity. Best for pour-over.

Medium Roast


The point where sweetness meets acidity. A balance of chocolate and nuts, with a smooth body. This is where our house blend lives.

Dark Roast


Pushed to near second crack for a deep finish of cacao and brown sugar. A heavy body and smokiness that pair well with espresso and milk drinks.
